You can always log out your account and log in with a different user.

to log out from the account please follow:-

1) Go to Game settings from Home page

2) Go to Account setting

3) Sign-Out from your linked account [i.e. Google Play Games/Game Center/Facebook]

You can Sign-in into the same account [i.e. Google Play Games/Game Center/Facebook] to access back your previous/old Game Profile,

Or You can add/Sign-in with different account [i.e. Google Play Games/Game Center/Facebook] to create a new Game Profile.
